IFFA 2025: A global showcase for innovation in meat and alternative proteins

Over 63,000 visitors from 144 countries attend the world’s leading trade fair for technology for meat and alternative proteins

The 2025 edition of IFFA—the world’s leading international trade fair for technology in the meat and alternative proteins industries—concluded on a high note after six dynamic days at the Messe Frankfurt exhibition center. Held from May 3–8, the event drew an impressive 63,117 trade visitors from 144 countries, setting a new attendance record and reaffirming IFFA’s status as the premier global platform for industry innovation. With international participants comprising 74% of attendees, the event highlighted the global relevance and continued growth of the meat and alternative protein sectors.

More than 1,000 exhibitors filled the expansive halls of Messe Frankfurt, presenting a comprehensive spectrum of solutions spanning meat processing, alternative protein production, digitalization, automation, and sustainability. From pioneering startups to global industry leaders, companies unveiled breakthrough technologies poised to reshape the future of food production.

This year’s trade fair focused on “Sustainable. Smart. Safe.”, reflecting the industry's ongoing shift toward climate-conscious production, automated processing, and clean-label demand in both traditional and plant-based protein segments. Across both animal-based and plant-based protein sectors, exhibitors demonstrated how innovation is driving more efficient, ethical, and scalable food systems.

IFFA Worlds at IFFA 2025

For the first time, IFFA Worlds guided visitors through a curated experience across five themed zones, each highlighting a core aspect of the evolving meat and protein industries. The World of Processing showcased advanced technologies for efficient and sustainable production, while the World of Packaging focused on future-ready, eco-conscious packaging solutions. The World of Ingredients featured innovations in spices, additives, and flavor development, and the World of New Proteins explored breakthroughs in plant-based, cultivated, and alternative protein sources. Rounding out the experience, the World of Skills and Sales celebrated craftsmanship, live competitions, and retail inspiration. These immersive zones, combined with expert-led features like Discovery Tours, the IFFA Factory, and the IFFA Kitchen, made IFFA 2025 more engaging, insightful, and future-focused than ever before.

A Hub of Innovation and Technology

One of the most striking features of IFFA 2025 was the high investment confidence displayed by exhibitors like JBT Marel, Weber, Multivac, ULMA Packaging, etc. to name a few. Despite the complex and ever-evolving global economic landscape, the industry demonstrated remarkable resilience, innovation, and competitiveness. The atmosphere on the exhibition floor was electric, with visitors from all corners of the world coming together to explore technological breakthroughs that will shape the future of food production.

Multivac showcased its cutting-edge automation solutions under the banner #ThinkConnected. Among its highlights was a high-output slicing line for raw ham, integrated with the new MULTIVAC Line Control (MLC) system. This breakthrough enables uninterrupted product changes, slashing downtime by up to 95%. Multivac also presented an AI-enhanced meat portioning line that boosts precision, reduces waste, and increases throughput—even in labor-constrained environments.

Dr. Tobias Richter commented at the press conference, “Rising costs, labor shortages, and sustainability demands require comprehensive solutions across the entire value chain—from raw materials to packaging. Smart technologies enhance not only machine efficiency but also enable agile, market-responsive production.”

GEA Botth at IFFA 2025

GEA launched several innovations designed to improve efficiency, precision, and sustainability in food processing. These included the GEA CookStar First, a spiral oven offering up to 12% energy savings, and the GEA MaxiFormer II, which extends cleaning intervals and reduces water consumption. Also featured were the GEA OptiSlicer 7000 and OptiScanner 5000, offering enhanced slicing accuracy and raw material yield. These tools are seamlessly managed via GEA’s SmartControl HMI and LineControl systems for real-time oversight and optimization.

ULMA Packaging impressed with automated, sustainable packaging solutions. Its TFX thermoforming series increases productivity while reducing cycle time, and the FM 400 Flow Pack machine extends product shelf life through Modified Atmosphere Packaging (MAP). Emphasizing hygiene and food safety, ULMA’s machines meet the highest standards for washdown processes and incorporate smart Industry 4.0 features.

Jesus Mª Del Rio, reflecting on the company’s strong heritage, emphasized ULMA Packaging’s commitment to innovation and sustainability, “We are presenting machines at IFFA that are compatible with more eco-friendly materials,” he said. “A key focus for us is developing smart, Industry 4.0-ready equipment. These systems are not only highly efficient but also user-friendly, featuring intuitive control panels and built-in connectivity that provide customers with valuable operational insights.” He added, “While we are moving toward more sustainable materials, ensuring the highest level of food protection—especially for proteins and meats—remains absolutely critical.”

Under the banner #SealingTheFuture, SEALPAC unveiled its next-generation tray-sealing technologies at IFFA 2025. The company showcased its latest innovations designed to meet the evolving needs of both traditional meat producers and the rapidly growing alternative protein sector.

Key Industry Trends at IFFA 2025

As the meat and alternative proteins industries continue to evolve, IFFA 2025 was an essential barometer for current and emerging trends. Some of the standout developments included:

  • Rise of Plant-Based and Hybrid Proteins: Demand for plant-based meat alternatives continues to reshape the protein landscape. At IFFA 2025, numerous exhibitors like ADM, Soy Austria, Proveg, and Good Food Institute unveiled new innovations mimicking the taste, texture, and appearance of animal meat. Hybrid products combining plant and animal proteins—such as those from Hydrosol and Planteeners—highlight a growing shift toward versatile protein portfolios.

  • Fermentation and Fungi-Derived Proteins: Fermentation-based protein production was a key trend, offering low-impact alternatives to conventional meat. Notably, Revyve presented yeast-derived texturizing ingredients that replace traditional egg components while enhancing texture in plant-based meats and bakery items.

  • Sustainability: The quest for sustainability remains a driving force in the industry. At IFFA 2025, sustainability was woven into every aspect of the exhibition, from energy-efficient processing systems to waste reduction technologies. Exhibitors like GEA, MULTIVA, ULMA Packaging showcased technologies aimed at minimizing the carbon footprint of meat and protein processing and packaging, as well as solutions from companies like Essentia Protein emphasized ethical sourcing, fair labor, and transparent supply chains.

  • Rethinking of Animal Proteins: With rising demand for healthier, cleaner food choices, IFFA 2025 spotlighted the reinvention of traditional meat products. Innovations in clean-label ingredients, fat-reduction techniques, and natural protein solutions took center stage, catering to health-conscious consumers without compromising on taste. A dedicated area on New Proteins featured suppliers of ingredients, equipment for protein extraction, texturization, fermentation, and cultivated meat production. The space was further enriched by contributions from research institutions, start-ups, and industry experts such as Meatable, offering valuable insights into the evolving landscape of alternative proteins.

Market Leaders Under One Roof

IFFA 2025 once again brought together the market leaders across all segments of the industry. The trade fair featured high-profile participation from key players in the meat processing sector, as well as from emerging companies pioneering new approaches to protein production.

Renowned industry names, such as JBT Marel, Multivac, Weber Technologies, Buhler, VEMAG, MiddleBy Food Processing, Provisur, among many other prominent names were present, showcasing their latest technological innovations. These companies, renowned for their cutting-edge solutions, played a significant role in shaping the conversation at the trade air, with a clear focus on optimizing production lines, improving automation, and addressing the global demand for sustainable food production.

In the alternative protein sector, companies ADM, Meatable, Proveg, Soy Austria, Hydrosol, etc. exhibited their latest products and technologies, offering visitors a glimpse into the future of protein production. These companies are not only transforming the way we think about protein but also challenging traditional notions of food production, with a focus on creating scalable, sustainable, and delicious alternatives to animal-based products.

Reflecting on the event, Stefan Gebhardt, Director Technical Sales at Coperion, remarked, “IFFA is a great platform to connect with people we don’t usually meet—especially from regions like South America and Asia. While the meat industry remains the main focus, it’s clear that the alternative protein segment is growing steadily. It’s a promising show for us in the mid and long term, and we certainly plan to participate again next time.”

Beyond the exhibits, IFFA 2025 provided ample opportunities for networking, knowledge exchange, and collaboration. The event featured numerous discovery tours, live shows, IFFA Factory, etc that allowed professionals to delve deep into the latest industry challenges and opportunities.

The high attendance from international trade visitors underlined the global appeal of IFFA as a platform for fostering cross-border partnerships and collaborations. From major suppliers to small innovative startups, everyone had a seat at the table, demonstrating the inclusive nature of the event and its importance as a meeting point for professionals across the entire meat and alternative proteins value chain.

With the success of IFFA 2025, the future of the meat and alternative protein industries is more promising than ever. The event reaffirmed its position as the definitive showcase for technological advancements, sustainable practices, and innovative solutions.
